Espresso

  • Sour or thin: grind a little finer.
  • Bitter or dry: grind a little coarser.
  • Fast shot: grind finer to slow it down.
  • Slow shot: grind coarser to help it move.

Milk

Texture matters more than foam.

  • For hot drinks, heat milk to about 140-150 F.
  • Milk should look like wet paint, not dry foam.
  • For iced drinks, use cold milk and let the espresso settle in naturally.

Sweetness

Sweeten in measured increments.

10g light 15g balanced 20g sweet

Start at 15g, then adjust by 5g. Keeping syrup measured lets you taste what the coffee and milk are doing.

Build Order

Build drinks in the same order.

  1. Add syrup first.
  2. Add espresso next.
  3. Finish with milk for hot drinks, or milk and ice before espresso for iced drinks.
Keep the dose and yield steady. If the shot needs work, change the grind first.

Vanilla Bean Latte

Hot or iced Classic

What you'll use

  • 36g espresso
  • 180g milk hot or 150g milk iced
  • 15-20g vanilla syrup
  • 120g ice if serving iced

Build

  1. Add vanilla syrup to the cup.
  2. Add espresso and stir lightly.
  3. Finish with milk. For iced, add milk and ice before pouring espresso over the top.
Why it works

Vanilla rounds the espresso without masking it. Ember is especially good here when you want caramel and berry notes to stay present.

Brown sugar brings a deeper sweetness that holds up well to espresso and oat milk without needing extra ingredients.

Vanilla Cardamom Latte

What you'll use

  • 36g espresso
  • 180g milk
  • 15g vanilla syrup
  • Small pinch of cardamom

Build

  1. Add vanilla syrup to the cup.
  2. Add espresso and the smallest pinch of cardamom.
  3. Finish with milk and taste before adding any more spice.
Why it works

Cardamom should sit in the background. Used lightly, it makes vanilla taste warmer while keeping the drink coffee-forward.

Syrup 01

Vanilla Bean

  • 240g water
  • 200g cane sugar
  • 1 vanilla bean

  1. Heat water and sugar until dissolved.
  2. Add vanilla bean and seeds.
  3. Simmer 10-15 minutes, cool, steep, strain, chill.

Syrup 02

Brown Sugar

  • 240g water
  • 200g brown sugar

  1. Heat until dissolved.
  2. Simmer lightly for 5-10 minutes.
  3. Cool and store.

Syrup 03

Maple Blend

  • 150g maple syrup
  • 90g water

  1. Warm gently over low heat.
  2. Do not boil.
  3. Cool and store.

Syrup 04

Blueberry

  • 150g blueberries
  • 200g water
  • 150g sugar

  1. Simmer berries, water, and sugar together.
  2. Mash as it cooks.
  3. Strain thoroughly and chill.

Syrup 05

Banana Bread

  • 1 ripe banana
  • 200g water
  • 180g sugar
  • Pinch cinnamon and salt

  1. Combine everything and simmer.
  2. Mash banana fully.
  3. Strain well and chill.

Cold Foam

A simple base and a few storage notes.

  • Cold foam base: 100g milk, 50g heavy cream, 10-15g syrup.
  • Blend until thick, silky, and pourable.
  • Store syrups chilled and strain fruit syrups well.
  • If the drink starts tasting like syrup first, pull the sweetness back.

A Useful Starting Range

Adjust one element at a time.

  • Use 10g syrup for lighter sweetness, 15g for balanced, 20g for sweeter drinks.
  • Add more espresso for strength and more milk for softness.
  • Swap whole milk for oat milk when you want a different texture instead of a different recipe.
